Crumble

We would appear to have a glut of Blackberries and Apples this year. After last years disaster when we had no blackberries to speak of and the apples were much reduced in number and size I decided to strick while the iron was hot so to speak and made 2 large crumbles.The first one has been devoured and the second one is in the freezer,but I have a feeling it won't be there for long

Home made ice cream

This is such a great recipe and very easy to make.I made it last week when we had friends to lunch and have made it again today to go with blackberry and apple crumble
To make 1 litre you just need to mix 85g of brown bread crumbs with 85g of dark brown sugar.Grill under a medium grill for about 8 minutes but do keep an eye on it you want it browned not burnt.
remove from grill and leave to cool then break it up with a fork. In the meantime separate 2 eggs and whisk the whites to a soft peak. Mix the yolks with some vanilla essence or Rum or Amaretto or any flavouring you want.
Whisk 300ml of double cream with 85g of icing sugar, then add the egg yolks,whites and the breadcrumbs. Put into a suitable container and freeze but remember to mix the ice cream once it starts to freeze.Do this for about 4 times then put a lid on and use as and when you want. take it from the freezer about 10 minutes before you want to serve it. I garantee it will not last long!!!! at least it doesn't in my house. ENJOY

coconut pyramids

For a long time now I have promised myself that I would try using recipes all in french, well this is my first attempt at baking something using a recipe from a collection of recipe cards I purchased that are all in French. So with a certain amount of trepidation I decided to make these coconut pyramids. Much to my surprise I managed to translate the recipe and used the correct amount of ingredients, they baked perfectly and tasted really delicious

Giant parsnip

Not sure how we managed to grow a parsnip this size but it happened. I cut it up yesterday and it is now also in the freezer with the other veg.

Freezer

Emptied the chest freezer yesterday and then filled it up with the veg we are still picking from the garden, so we now have our own carrots, cabbage, pumpkins and even some small but perfectly formed Brussels sprouts. This week we will also be freezing our own leeks and rutabaga and I still have 1 huge pumpkin in the greenhouse to make into soups and pies.

New Year

This is my first blog for the New Year.
I am very happy that so far the weather is a great deal better than this time last year. Hopefully it is not too late to show the christmas cake and also the xmas pud cupcakes made by @crypticchris. I am very pleased with the recipe for this cake it is really foolproof, I also used the same one for a Golden Wedding cake I made for someone in September.
